Grilled Peach Caprese

Ingredients -
2 Peaches
2 TBSP of Olive Oil
1 tsp of lemon zest
1/2 TBSP of Lemon Juice
1 tsp of Honey
1/2 tsp Salt
1/2 tsp Pepper
1/4 roasted almonds
12 oz fresh mozzarella
1/4 C. of fresh basil
Preparation -
Begin by chopping the peaches into 8 slices. Now, grate 1 teaspoon of lemon zest and juice 1/2 tablespoon of lemon juice. Next, chop the almonds then roast in a small pan over low to medium heat.
Prepare the peaches with 2 teaspoons of olive oil then grill for 1 minute each side. Set the peaches on a plate the set aside. Now you will need a bowl and whisk to make the sauce. Add the lemon juice, honey, and 1/4 teaspoon of salt, 1/4 teaspoon of pepper. Whisk until honey is mixed well then whisk in 2 tablespoons of olive oil. Now mix in the lemon zest and almonds. Gently tear the fresh basil then fold into the lemon almond sauce. Slice the fresh mozzarella to serve top with the grilled peaches and lemon almond sauce. Garnish with salt, pepper, and basil.
